Ingredients

Donut Holes
  • 1/2 cup oat flour
  • 1/4 cup coconut flour
  • 2 tablespoons vanilla protein powder
  • 2 large eggs
  • 1 container (5.3 oz) vanilla greek yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup (or your choice of sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon xanthan gum
  • Pinch of salt
Powdered Topping
  • 5 tablespoons powdered natural sweetener
  • Sprinkle ground cinnamon

Directions

  1. In a medium bowl, add your dry ingredients and mix everything together.
  2. In another bowl, add your wet ingredients and mix everything together.
  3. Carefully pour the wet ingredients into the dry ingredients and mix until it forms a thick smooth batter.
  4. Preheat your air fryer on 350F
  5. Using a small ice cream scoop or about a tablespoon measuring spoon, scoop a portion of your batter.
  6. Spray your hands with non-stick cooking spray. These will be sticky.
  7. Use your hands to roll and form it into a ball.
  8. Place in your air fryer basket, leaving enough space in-between each ball.
  9. Continue to roll your remaining mixture into balls. Continue to spray your hands with non-stick cooking spray. If it’s too sticky to roll, simply use a cookie scoop and scoop the mixture directly onto the air fryer basket.
  10. Bake in 350F for 8-10 minutes.
  11. Let the donut holes cool for several minutes. Finish cooking your remaining batches of donut holes if necessary.
  12. Optionally coat them in some naturally-sweetened powdered sugar and sprinkle some ground cinnamon on top.
  13. Serve.
