Ingredients

Base
  • 1 cup 4% milk fat cottage cheese
  • 1/4 cup plain whole milk greek yogurt
  • 1 cup mixed berries (fresh or frozen)
  • 1 1/2 tablespoons honey
Optional Add-ins
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
Toppings
  • Mixed berries
  • Whipped Cream
  • Crushed graham cracker or granola or flaxseed

Directions

  1. To a high‑powered blender, add the cottage cheese, Greek yogurt, mixed berries, maple syrup (or honey), lemon juice, vanilla, and cinnamon if you’re using it.
  2. Blend on high, stopping to scrape down the sides as needed, until the mixture is completely smooth and creamy with no visible cottage cheese curds.
  3. Taste and adjust: add a little more maple or honey if you want it sweeter, a splash more lemon for extra tang, or a tiny splash of milk if it’s too thick to blend, then blend again just to combine.
  4. Pour the pudding back into your bowl, cover, and refrigerate for at least 1 hour, or until nicely chilled and slightly thicker.
  5. When you’re ready to serve, give it a quick stir and finish with extra berries, a sprinkle of crushed graham cracker or granola, and a drizzle of date syrup on top.

Notes

Blend until completely smooth to eliminate cottage cheese curds. Tastes great stored in the fridge for up to 3 days.
