Ingredients

  • 1 Red Bell Pepper cut into 1 inch pieces
  • 1 Yellow Bell Pepper cut into 1 inch pieces
  • 1 Green Bell Pepper cut into 1 inch pieces
  • Half a Red Onion cut into 1 inch pieces
  • 6 oz Broccoli Florets
  • 6 oz Cauliflower Florets
  • 8 oz Mushrooms
  • 3 Tablespoons Olive Oil
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes optional

Directions

  1. Preheat oven to 400F
  2. Wash all of your vegetables
  3. Begin cutting them into about 3/4 inch to 1 inch pieces. Try to get them as close in size as possible.
  4. Place all of your vegetables into a large bowl. If all of them won’t fit, divide it up into 2 or 3 separate parts. If you are dividing them up into separate parts, be sure to divide the amount of oil and seasonings as well.
  5. Drizzle olive oil and seasonings and mix well.
  6. Take out a baking dish and line it with parchment paper. Spray with non-stick cooking spray.
  7. Arrange the vegetables on the tray. Do your best to make sure they are not overlapping. If they won’t fit or are touching, use additional baking pans or bake them in additional batches.
  8. Bake on 400F for 15 minutes. Rotate the pans 180 degrees after 15 minutes and then bake for another 15 minutes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. These reheat well in a skillet or air fryer to restore crispness. Feel free to swap in any seasonal vegetables you have on hand.
