Air Fryer Italian Herb Cod

Crispy panko-crusted cod fillets with Italian herbs, cooked to perfection in the air fryer. A high-protein, low-effort dinner ready in just 30 minutes.

Ingredients
  

  • 2 lbs frozen cod fillets
  • 2 cups panko breadcrumbs
  • 3/4 cup flour
  • 2 large eggs
  • Juice from half a lime
  • 1 Tablespoon dijon mustard
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red chili flakes optional
  • 1/2 teaspoon black pepper

Directions
 

  1. If using frozen cod fillets, be sure to thaw them.
  2. Pat the cod fillets dry with a paper towel.
  3. Preheat your air fryer on 400F for five minutes
  4. In a bowl, add your eggs, dijon mustard and lemon juice and mix.
  5. In a second bowl, add your flour.
  6. In a third bowl, add your panko breadcrumbs along with your seasonings.
  7. Dip your cod fillets into the flour, then into the wet mixture and finally in the panko mixture and place in your air fryer basket.
  8. Repeat step 7 for your remaining fillets. Bake in multiple batches if you run out of space in your air fryer.
  9. Bake on 400F for 15 minutes, flipping them halfway.
  10. Let it cool for several minutes before cutting and serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes to restore crispiness.
