Ingredients

Fries
  • 3 lbs russet potatoes scrubbed and cut into wedges (about 1/2 inch thick)
  • 3 tablespoons avocado oil
  • 1/2 cup parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon Italian seasoning
  • 1/2 tablespoon onion powder
  • 1 Teaspoon Salt
  • 1/2 teaspoon black pepper
Garnish
  • Fresh parsley
  • Grated parmesan cheese
  • Your preferred condiments

Directions

  1. If you plan on peeling your potatoes, begin peeling them.
  2. Slice your potatoes into wedges, about 1/2 inch thick.
  3. Give the wedges a quick rinse in a colander to wash off any excess dirt.
  4. Place your cut fries into a large bowl of cold water and completely submerge them under the water.
  5. Let them soak in the water for one hour,
  6. After an hour, drain the fries and pat them dry with a paper towel.
  7. EIther return your wedges to the large bowl, or add them in a large plastic bag. It will be easier to mix everything in a large plastic bag.
  8. Add your oil and seasonings and mix well.
  9. Preheat your air fryer on 400F for 5 minutes.
  10. Place the fries at the bottom of the air fryer basket and make sure they don’t stack on top of each other. Cook them in two or three separate batches if necessary.
  11. Optionally sprinkle additional salt on top of the wedges.
  12. Cook them on 400F for 18-20 minutes, shaking the basket halfway during the cooking.
  13. Repeat this process until all of your fries are cooked.
  14. Garnish with fresh parsley and grated parmesan cheese and serve.

Notes

For extra-crispy wedges, soak the potatoes a full hour to remove excess starch. Air fryers vary, so keep an eye on the first batch for timing adjustments.
