Almond Flour Cottage Cheese Flatbread

Ingredients
  

Flatbread
  • 1 cup 4% milkfat cottage cheese
  • 1/2 cup shredded cheese (preferably low moisture mozzarella)
  • 1/4 cup grated parmesan cheese
  • 2 large eggs
  • Pinch of black pepper
Filling Options
  • Spinach / Lettuce
  • Sliced tomatoes
  • Shredded cheese
  • Smoked ham
  • Onion slices

Directions
 

  1. Preheat your oven on 350F.
  2. Add all of your ingredients into a food processor or powerful blender, but only add half of your shredded cheese.
  3. Blend until you have a smooth mixture.
  4. Add the remaining half of your shredded cheese and fold that in. Do not blend.
  5. Take out a baking sheet, place some parchment paper on it and give it a light spray of oil.
  6. Pour your mixture onto the sheet in the shape of a large rectangle. Or feel free to shape your flatbread however you prefer.
  7. Bake on 350°F for 35-40 minutes.
  8. Let it cool for about 5 minutes before placing your favorite toppings on it.
  9. Place your favorite toppings on top, then fold into a wrap.
  10. Serve
