Apple Cinnamon Protein French Toast

This apple cinnamon protein french toast packs 51 grams of protein across all four slices, and each one still lands at just 160 calories. The batter is built from eggs, vanilla whey protein, and unsweetened applesauce, so the whole grain bread soaks up moisture without heavy cream or butter. It comes together in about 20 minutes and makes a batch you can reheat on busy mornings all week.

Ingredients

French Toast:
  • 2 large eggs
  • 1/4 cup vanilla whey protein powder
  • 1/2 cup unsweetened applesauce
  • 1/4 cup unsweetened vanilla almond milk
  • 1 tablespoon sugar-free brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg optional
  • 4 slices whole grain bread
Garnish:
  • Maple syrup
  • Apple slices
  • Powdered sugar sugar free
  • Ground cinnamon

Directions

  1. Take out a bowl to prepare your batter.
  2. Add all of the ingredients for the batter into the bowl and mix everything together until it's smooth.
  3. Turn a burner on medium low heat and place a skillet on top of it. Give it a light spray of oil.
  4. Dip each slice of bread into the batter, about 15-30 seconds per side, so they get fully coated.
  5. Add your bread into the skillet. Do not overcrowd the skillet and cook in two batches.
  6. Cook on medium low heat for about 4-5 minutes on one side. Flip it over and finish cooking for about 1-2 more minutes until the bread is no longer soggy.
  7. Repeat the process for your remaining slices.
  8. Plate your French toast, drizzle it with maple syrup, top it with whipped cream and sprinkle ground cinnamon over it.
  9. Serve.
