Baked Peanut Butter Banana Oatmeal

Ingredients
  

  • 2 cups Old Fashioned Oats
  • 2 medium ripe bananas
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup No-added Sugar Peanut Butter
  • 1 Large Egg
  • 1 ¼ Cups Unsweetened Vanilla Almond Milk
  • 2 Tablespoons Honey
  • 1 Teaspoon Vanilla Extract

Directions
 

  1. Take out a large bowl and add your peanut butter in it.
  2. MIcrowave it for 30 seconds to soften it if necessary.
  3. Add your two bananas and mash them using a fork.
  4. Add the rest of your wet ingredients and mix until well combined.
  5. Add all of the dry ingredients and mix until well combined.
  6. Take out an 8x8 baking dish and line it with parchment paper if needed.
  7. Add your mixture to the baking dish.
  8. Bake uncovered on 350F for 40-45 minutes, checking with a toothpick near the end to ensure it comes out clean.
  9. Drizzle with melted peanut butter and top with sliced bananas
  10. Let it cool for about 5-10 minutes before cutting into it.

Store covered in the refrigerator for up to 5 days. Reheat individual slices for 30 seconds in the microwave for a fresh-out-the-oven feel.
