- Take out a large bowl, peel your bananas and add your bananas into the bowl.
- Using a fork, mash your bananas until it turns into a puree.
- In the same bowl, begin adding your wet ingredients which should be the eggs, unsweetened apple sauce, milk, vanilla extract, and date paste/syrup.
- Mix everything together.
- Take out another large bowl and begin adding your dry ingredients which should be your oat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, protein powder and salt.
- Mix everything together.
- Add 1/2 cup of crushed walnuts or your choice of nuts. This is optional and you can omit if you don’t want any nuts.
- Slowly add the dry mixture into your wet mixture while stirring. Mix until combined.
- Take out a muffin tin and line it with muffin liners.
- Spray them with a bit of non-stick cooking spray and add your mixture. Be careful not to overfill them. Fill them up about 3/4 max.
- Bake on 350F for 25- 30 minutes.
- Let them cool for about 10 to 15 minutes before removing them.

Notes
Store leftover muffins in an airtight container in the refrigerator for up to 5 days, or freeze them for up to 3 months. These reheat nicely in the microwave for 20 seconds.
