Blueberry Banana Oatmeal Protein Cookies

Ingredients
  

  • 1 medium banana ripe
  • 1 large egg
  • 3 tablespoons natural peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cup old fashioned rolled oats
  • cup vanilla protein powder
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup fresh blueberries tossed lightly in 1 teaspoon oat flour

Directions
 

  1. Take out a large bowl and add your banana, peanut butter, egg, vanilla extract and cinnamon. Mix everything together until smooth.
  2. Add your oats and protein powder into the bowl and mix until a thick dough forms. Add about a teaspoon of oat flour into a bowl with your blueberries to coat them in oatflour.
  3. Gently fold in your blueberries and mix everything together.
  4. Spray an air fryer basket with non-stick cooking spray.
  5. Use a medium-sized cookie scoop and scoop your mixture onto the air fryer, flattening slightly to about 1/2 inch thick.
  6. Air fry on 325F in batches for 8 to 10 minutes, checking at 8 minutes. Tops should be dry and lightly golden.
  7. Let them cool for 2 to 3 minutes in the basket before removing. They will firm up slightly as they cool.
  8. Finish cooking your remaining batches.
  9. Serve.
