Reduce the heat to medium-low and pour your egg mixture into the skillet, gently stirring with a spatula to combine everything
Cook until the eggs are just set and still slightly soft, then remove from heat to prevent overcooking
Sprinkle your shredded cheese over the hot mixture and let it sit for a minute to melt, then fold everything together
Warm your tortillas until pliable, either in a dry skillet for 20-30 seconds per side or in the microwave with a damp paper towel
Lay one tortilla on a flat surface and overlap the second by about one-third in the center
Spoon your filling across the overlapped area, leaving space on the sides and ends for folding
Fold the tortilla sides toward the center, then fold up the bottom edge and roll tightly away from you
Place seam-side down in a lightly oiled skillet over medium heat and cook 1-2 minutes per side until browned and crisp
Remove from the skillet, let it sit for a minute to set, then slice in half if desired and serve
