Ingredients
  

  • 2 large tortillas 10 inches
  • 3 large eggs
  • 1 chicken sausage link diced
  • 1 small russet potato diced
  • 1/3 cup shredded cheese
  • 1/4 cup diced onions
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Pinch of salt and black pepper

Directions
 

  1. Dice your potatoes into small 1/4 inch pieces and finely dice your onions
  2. Crack your eggs into a bowl and whisk until the yolks and whites are fully combined
  3. Add your dry seasonings to the eggs and mix everything together
  4. Heat a nonstick skillet over medium heat and give it a light spray or drizzle of oil
  5. Add your diced potatoes to the skillet and cook for about 8-10 minutes, stirring occasionally, until golden on the edges and fork-tender
  6. Add your diced onions to the skillet and cook for 2-3 minutes, stirring often, until they soften and turn slightly translucent
  7. Stir in your diced chicken sausage and cook for another 2-3 minutes, just until warmed through and lightly browned in spots
  8. Reduce the heat to medium-low and pour your egg mixture into the skillet, gently stirring with a spatula to combine everything
  9. Cook until the eggs are just set and still slightly soft, then remove from heat to prevent overcooking
  10. Sprinkle your shredded cheese over the hot mixture and let it sit for a minute to melt, then fold everything together
  11. Warm your tortillas until pliable, either in a dry skillet for 20-30 seconds per side or in the microwave with a damp paper towel
  12. Lay one tortilla on a flat surface and overlap the second by about one-third in the center
  13. Spoon your filling across the overlapped area, leaving space on the sides and ends for folding
  14. Fold the tortilla sides toward the center, then fold up the bottom edge and roll tightly away from you
  15. Place seam-side down in a lightly oiled skillet over medium heat and cook 1-2 minutes per side until browned and crisp
  16. Remove from the skillet, let it sit for a minute to set, then slice in half if desired and serve
