- Take out a cutting board, trim the fat off of your chicken breasts and then butterfly them in half.
- In a large bag add your chicken breasts along with all of the ingredients listed for the chicken.
- Marinade for 30 minutes to 2 hours, preferably overnight.
- While the chicken marinades, prepare your fajita ingredients. Rinse your vegetables and cut them into your desired sized pieces. Add all of them to a bowl.
- Add your avocado oil, lime juice and salt and black pepper to your vegetables and mix.
- Take out a skillet or grill pan and turn your burner on medium heat.
- Sauté the onions and bell peppers for 10-15 minutes. Set aside once done.
- Once your chicken is done marinating, cook on a skillet or grill pan on medium heat for 5 to 8 minutes per side, 10-16 minutes total.
- Plate your dish and serve.

For best flavor, marinate the chicken overnight. The spice blend gets even more complex as it sits.
