- Take 1 or 2 chipotle peppers from a can and finely chop them up. Add to a medium bowl along with some of the adobo sauce from the can.
- In the same bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, pepper and cayenne pepper.
- Add shrimp to the marinade and toss to coat evenly.
- Let it marinate for at least 15-30 minutes in the refrigerator.
- Combine Greek yogurt, olive oil, minced garlic, cilantro, lime juice and salt in a food processor.
- Process until smooth and creamy. Taste and adjust seasonings as needed (more lime for tang, more salt if necessary).
- Heat a large skillet over medium-high heat.
- Add marinated shrimp in a single layer (you may need to work in batches to avoid overcrowding).
- Cook for 3-4 minutes per side, until pink and opaque. Be careful not to overcook – shrimp cooks quickly!
- Warm tortillas according to package directions. You can lightly char them directly on a gas stovetop (using tongs!), warm in a dry skillet, or microwave briefly wrapped in a damp paper towel.
- Lay out warmed tortillas.
- Apply a small amount of the cilantro lime yogurt sauce on a tortilla and spread evenly.
- Add your shredded cabbage or lettuce
- Add your shrimp
- Top with sliced avocado.
- Garnish with fresh cilantro.
- Serve immediately!
