Chocolate Covered Strawberry Protein Clusters

These no-bake yogurt clusters combine creamy Greek yogurt and fresh strawberries, then get dipped in rich sugar-free chocolate for a high-protein dessert that hits 30+ grams of protein per serving.

Ingredients
  

  • 1 cup fresh strawberries diced
  • 1 cup plain non-fat greek yogurt
  • 1/4 cup vanilla whey protein powder
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • 10 oz sugar-free or naturally-sweetened chocolate chips
  • 1 ½ tablespoons coconut oil
  • flaky sea salt for topping, optional

Directions
 

  1. In a large bowl, add your mixed berries and greek yogurt and mix well.
  2. Take out a baking sheet and line it with parchment paper.
  3. Using a spoon or a cookie scoop (about 2 tablespoons), place small clusters onto the baking sheet.
  4. Place the baking sheet in the freezer for about 45 minutes to an hour until they are frozen.
  5. Prepare the chocolate by adding chocolate chips and coconut oil to a microwave-safe bowl. Use a small but deep bowl if possible.
  6. Melt the chocolate in intervals of 15 to 30 seconds, mixing each time. Repeat this process until the chocolate is smooth.
  7. Remove the yogurt clusters from the freezer and remove the parchment paper.
  8. Pat them dry with a paper towel.
  9. Using a fork, dip and toss the yogurt clusters into the chocolate until fully coated. Repeat the process for your remaining clusters.
  10. Return to the baking sheet with a new line of parchment paper.
  11. Optionally top with a small amount of salt.
  12. Return to the freezer for 30 minutes.

Store in an airtight container in the freezer for up to 1 week. Let sit at room temperature for 2-3 minutes before eating for the best texture.
