- On a cutting board, trim off any excess fat on your chicken and butterfly them. Pound them to thin them out if necessary.
- In a large bowl or plastic bag, add your lime juice, oil, minced garlic, chopped cilantro, honey and seasonings and mix well.
- Add your chicken breasts to the marinade and mix well.
- Place in a refrigerator for at least 2 hours, preferably overnight if possible.
- Take out a skillet or grill pan and coat with non-stick cooking spray
- Cook your chicken breasts on medium high heat for 5 to 7 minutes per side.
- Serve and garnish with additional cilantro.

For best flavor, marinate overnight. This recipe grills up beautifully on an outdoor grill for a smoky char.
