- To begin, start by rinsing the brown rice in a fine mesh sieve until the water becomes clear. Make sure to drain it thoroughly.
- Next, heat some oil in a pan over medium heat. Use a large saucepan and add one tablespoon of olive oil to get started.
- Now, sauté some onions and garlic. Add diced onions to the pan and cook them until they become translucent, which should take around five minutes. Then, add minced garlic and continue cooking for another minute, stirring constantly to prevent burning.
- After that, add minced ginger, curry powder, ground cumin, ground turmeric, salt, and black pepper, and cook for about a minute or two while stirring constantly.
- Add the rinsed brown rice along with your coconut milk and vegetable broth.
- Bring the mixture to a boil, then reduce the heat to low, cover it, and let it simmer for about 35-40 minutes, or until the liquid has been absorbed and the rice is fully cooked.
- Before serving, taste and adjust the seasoning as needed.
- Garnish with green onions and red chili flakes.
