Ingredients
  

Base
  • 1 cup 4% milk fat cottage cheese
  • 1 medium ripe banana
  • 1 1/2 tablespoons 22 mL maple syrup
Optional Add-ins
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
Optional Toppings
  • Whipped cream
  • Vanilla wafers
  • Banana slices

Directions
 

  1. To a high-powered blender, add the cottage cheese, banana, maple syrup (or honey), vanilla, cinnamon, and a small pinch of salt.
  2. Blend on high, stopping to scrape down the sides as needed, until completely smooth and creamy with no visible cottage cheese curds. This should only take 30–60 seconds.
  3. Taste and adjust: add a little more maple or honey if you want it sweeter, or a tiny splash of milk if it’s too thick to blend. Blend again just to combine.
  4. Transfer to a bowl or mason jar, cover, and refrigerate for at least 1 hour, or until nicely chilled and set.
  5. Right before serving, give it a quick stir and top with sliced banana, a dusting of cinnamon, or crushed vanilla wafers if you want classic banana pudding vibes.
