Cottage Cheese Brownies

These cottage cheese brownies pack 9 grams of protein per serving and taste just like a regular brownie. Blending four ingredients in a high-speed blender gives you a thick, chocolatey batter that bakes up fudgy. You can make them ahead and keep them in the fridge for a quick high-protein dessert all week long.

Ingredients
  

  • 2 cups low fat cottage cheese
  • 4 large eggs
  • 1 cup unsweetened cocoa powder
  • 3/4 cup calorie-free natural sweetener or use honey/maple syrup

Directions
 

  1. Preheat your oven on 350°F (175°C).
  2. In a high-speed blender or food processor, add all of your ingredients into the jar.
  3. Blend until completely smooth and thick. Scrape the sides as needed.
  4. Take out a 8"x8" baking dish and line it with some parchment paper. Give it a light spray of oil.
  5. Pour your mixture onto the baking dish and make sure it evenly spreads out. Bake on 350F for 35 to 40 minutes.
  6. Let it cool for about 10 to 15 minutes, then cover the baking pan with wrap/foil and let it chill for at least 2 hours. Cut your brownies into your preferred size.
  7. Serve
