Ingredients
  

Bites:
  • 1 cup 227 grams cottage cheese
  • 4 large eggs
  • 4 egg whites or replace with 4 large eggs (8 eggs total)
  • 3/4 cup shredded cheese
  • 1/3 cup grated parmesan cheese
  • 1/4 cup bacon bits (or 2-3 slices of cooked bacon, diced)
  • 1/2 teaspoon smoked paprika optional
  • 1/4 teaspoon black pepper
Garnish:
  • Hot sauce
  • Green onions

Directions
 

  1. Preheat your oven to 350°F
  2. Grease a 12-cup muffin tin very well or use silicone muffin cups
  3. Take out a blender and add all of your wet ingredients
  4. Add your dry ingredients to the blender, excluding the bacon bits
  5. Blend on medium speed until smooth and well combined, about 20 to 30 seconds
  6. Pour the mixture into a bowl and stir in the bacon bits by hand
  7. Divide the mixture evenly among the 12 muffin cups, filling each about ¾ full
  8. Bake at 350°F for 22 to 28 minutes until the centers are set and a toothpick comes out clean
  9. If the tops brown too quickly, loosely tent with foil
  10. Let them cool in the pan for 5 to 10 minutes, then pop them out
  11. Cool completely before refrigerating
  12. Store in an airtight container for up to 4 to 5 days, or freeze for longer
  13. Garnish with hot sauce and green onions
  14. Serve.
