- Take out a blender.
- Add your cottage cheese, egg whites, parmesan cheese, Italian seasoning, garlic powder, onion powder and salt into the blender and blend until it’s completely smooth with no chunks.
- Preheat your oven to 375°F. Line a quarter or half sheet pan with parchment paper and give it a light spray of oil.
- Pour your blended mixture onto the parchment paper and spread it into a thin circle, oval or rectangle, about 1/4 inch thick, leaving the edges slightly thicker.
- Bake for about 25–30 minutes, or until the flatbread is set, lightly golden on top and dry to the touch in the center. If it puffs up, gently press it down with a spatula and keep baking until the middle is fully set.
- Remove the flatbread from the oven and let it cool for 5–10 minutes to firm up before adding toppings.
- Take out your marinara sauce and shredded cheese.
- Spread a thin layer of marinara sauce over the cooked flatbread, leaving a small border around the edges.
- Add your shredded cheese on top of the sauce.
- Add your toppings such as shredded chicken, turkey bacon or any other toppings you like.
- Place the flatbread pizza back into the oven.
- Bake for an additional 5–10 minutes, or until the cheese is melted and bubbling and the edges are browned.
- Remove the pizza from the oven and let it cool for 2–3 minutes to firm up.
- Slice your cottage cheese flatbread pizza and serve.

Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or skillet to restore crispness to the crust.
