Ingredients
  

Base
  • 1 cup 4% milk fat cottage cheese (or reduced fat)
  • 3/4 cup old fashioned rolled oats
  • 2 tablespoons flaxseeds (or chia seeds)
  • 1/2 cup unsweetened almond milk
  • 1/2 cup chopped fruit of your choice (I used strawberries and blueberries)
  • 1 1/2 tablespoons honey (Or 3 tablespoons natural sweetener like monk fruit)
  • 1/2 teaspoon vanilla extract
Toppings
  • Fresh fruit
  • Flaxseed

Directions
 

  1. Add all of your ingredients except for the chopped fruit into a food processor or blender.
  2. Blend everything together until combined.
  3. Transfer the contents to a bowl or mason jar.
  4. Add your chopped fruit into the blended mixture and fold it in.
  5. Seal the jar or bowl and place it in the fridge for 4-6 hours, preferably overnight.
  6. Add additional toppings if necessary.
  7. Serve.

Notes

Blend until smooth for the creamiest texture. You won’t taste the cottage cheese and the texture will be smooth. Store covered in the fridge for up to 3 days.
