Ingredients
  

Mousse:
  • 1 cup full-fat cottage cheese
  • 1/4 cup natural peanut butter
  • 1/4 cup calorie-free natural sweetener monk fruit or stevia
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Milk as needed if it’s too thick
Garnish:
  • Crushed peanuts or nuts
  • Peanut Butter Drizzle
  • Chocolate chips

Directions
 

  1. Add all of your ingredients into a blender or food processor.
  2. Blend on high for 2–3 minutes, scraping down the sides as needed, until completely smooth and free of curds.
  3. Transfer your blended mixture into a bowl or a mason jar.
  4. Cover and refrigerate for at least 30 minutes, preferably for 2–3 hours for a firmer set.
  5. Top with crushed peanuts, a peanut butter drizzle, and a scatter of chocolate chips just before serving.
