Ingredients

Chicken:
  • 1 lb boneless skinless chicken breasts
Breadcrumb Mixture:
  • 1 cup panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
Flour:
  • 1/2 cup flour add more if necessary
Egg Wash:
  • 1 large egg
  • 1 tablespoon honey
  • 1/2 tablespoon hot sauce or sriracha sauce
  • 1 teaspoon melted butter
Hot Honey Sauce:
  • 1/3 cup honey
  • 3 tablespoons hot sauce or sriracha sauce
  • 1 1/2 tablespoons melted butter
For the wraps:
  • 4 burrito-size 9-10 inch flour tortillas
  • 3 oz cooked chicken per wrap
  • 1 tablespoon mayo
  • 1/4 cup shredded lettuce or spinach
  • 1 tablespoon sliced onions
  • 2-4 grape tomatoes halved

Directions

  1. Cut your chicken breasts into tender-sized strips and pat them dry with paper towels.
  2. Take out three shallow bowls or plates. Add your flour to one bowl. In another bowl, mix together the egg, honey, hot sauce and melted butter for the egg wash. In the third bowl, combine the panko breadcrumbs with the smoked paprika, garlic powder, salt, black pepper and cayenne pepper.
  3. Dredge each chicken strip in the flour, shaking off any excess. Dip the floured strips into the egg wash and then press them into the seasoned panko, packing it firmly on all sides.
  4. Lightly oil the air fryer basket and arrange the breaded tenders in a single layer without crowding. Lightly spray the tops of the tenders with oil.
  5. Air fry on 400°F for 12 to 14 minutes, flipping halfway through, until they are golden and the internal temperature reaches 165°F. Let the tenders rest for a couple minutes.
  6. While the chicken rests, take out a bowl and whisk together the honey, hot sauce and melted butter for the hot honey sauce.
  7. Turn a burner on medium low heat and place a skillet on top. Pour your hot honey sauce onto the skillet to let it heat up for about a minute or two.
  8. Toss the rested tenders in the sauce until they are fully coated.
  9. Warm each tortilla briefly to make it pliable. Spread about 1 tablespoon of mayo on the tortilla.
  10. Add about 3 ounces of the sauced chicken per wrap. Add your preferred vegetables for your wrap such as shredded lettuce or spinach, onions and tomatoes. Top with cheese if desired.
  11. Fold in the sides and roll tightly burrito-style.
  12. This is optional but recommended, sear the wraps seam-side down for 1 to 2 minutes to toast them.
  13. Serve.
