Ingredients

Dry ingredients:
  • ½ cup vanilla whey protein powder
  • ¼ cup powdered peanut butter e.g. PB2
  • 3 tbsp (coconut flour
  • 2 tbsp Lakanto monk fruit/allulose sweetener
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
Wet ingredients:
  • ½ cup non-fat plain Greek yogurt
  • ½ tsp vanilla extract
Coating:
  • 2 tablespoons powdered peanut butter

Directions

  1. Take out a bowl to mix your dry ingredients.
  2. Add all of the dry ingredients and mix everything together.
  3. Take out another bowl and add all of your wet ingredients. Mix everything together.
  4. Add the wet ingredients into the bowl with the dry ingredients and mix until a dough forms. The dough should be firm, not wet.
  5. If the dough feels too soft or sticky, add your coconut flour 1 teaspoon at a time until it firms up. Refrigerate the dough for 20 to 30 minutes to let it firm up. This makes it much easier to roll.
  6. Roll the dough into 12 even balls.
  7. Roll each ball in your powdered peanut butter or coconut flour for a light coating.
  8. Serve your energy balls. Store in the fridge in an airtight container.
