Ingredients
  

Cookies
  • 1 cup almond flour
  • 4 tablespoons butter
  • 1/3 cup calorie free natural sweetener (stevia, monk fruit, erythritol etc)
  • 1/4 cup crushed nuts of your choice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon xanthan gum (optional)
  • Pinch of salt
Coating
  • 1/3 cup Powdered natural sweetener (stevia, monk fruit, erythritol etc)

Directions
 

  1. Preheat your oven on 325F
  2. Take out a large bowl to mix your dry ingredients.
  3. Add all of your dry ingredients and mix everything together.
  4. Take out another bowl for your wet ingredients.
  5. Add all of your wet ingredients and mix everything together.
  6. Pour your wet mixture into your bowl of dry mixture and mix everything together.
  7. Chill the dough in the refrigerator for about 30 minutes.
  8. Take out a baking sheet, line it with parchment paper and give it a light spray of oil.
  9. Scoop about 1 ½ to 2 tablespoons worth of your mixture and place it on your baking sheet.
  10. Place on your baking sheet and repeat the process until you are out of your mixture.
  11. Spray your hands with oil and carefully press the dough together until it’s in the shape of a cookie. It should hold its shape.
  12. Bake on 325F for 15-20 minutes
  13. Let it cool for about 5-10 minutes before rolling them in a bowl of powdered natural sweetener.
