Ingredients
  

Base
  • 1 cup cottage cheese
  • 1 cup old fashioned rolled oats
  • 2 tablespoons 14 grams flax seeds (or chia seeds)
  • 1/4 cup unsweetened almond milk
  • 1 cup mixed berries (fresh or frozen)
  • 1 1/2 tablespoons honey (Or 3 tablespoons natural sweetener like monk fruit)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
Toppings
  • Fresh fruit
  • Whipped cream
  • Flaxseed

Directions
 

  1. Add your cottage cheese, milk, mixed berries, honey, vanilla extract and lemon juice into a blender jar.
  2. Blend everything together until combined.
  3. Either in the same blender jar or a large bowl, add your oats and flaxseed and combine them together.
  4. Transfer the contents to a mason jar, or keep in the bowl if you plan to eat it from there.
  5. Seal the jar or bowl and place it in the fridge for 4-6 hours, preferably overnight.
  6. Add additional toppings if necessary.
  7. Serve.

Notes

Store in the fridge for up to 3 days. The oats will absorb the liquid overnight, so give it a good stir before eating.
