Ingredients
  

  • 2 cup old fashioned whole rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup peanut butter
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons chocolate chips (optional)
  • Pinch of salt

Directions
 

  1. Mix all of your ingredients into a large mixing bowl. Add your chocolate chips last to ensure everything gets mixed evenly first.
  2. Lightly spray non-stick cooking spray on your hands to help prevent the mixture from sticking to your hands.
  3. Using your hands or a cookie scoop, form evenly sized balls. Aim for about 1 ½ to 2 tablespoons worth of your mixture.
  4. Place in the fridge for about 1 hour or longer.
  5. Serve
