Protein Banana Bread

A moist, high-protein banana bread made with oat flour, vanilla protein powder, and Greek yogurt. It tastes like comfort food while packing 14g of protein per slice.

Ingredients
  

  • 1 ½ cups Oat Flour
  • 3/4 cups Vanilla Protein Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 3 Medium Bananas
  • 2 Large Eggs
  • 1/4 cup Unsweetened Applesauce
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 1 5.3 oz Container Naturally-sweetened Vanilla Greek Yogurt

Directions
 

  1. Turn your Rolled Oats into Oat Flour by blending or processing them until they look like flour. Skip this step if you’re using a different type of flour.
  2. Take out a bowl and add your ripe bananas into the bowl.
  3. Using a fork, begin mashing the banana until it becomes a purée.
  4. Add all of your wet ingredients into the bowl.
  5. Add all of your dry ingredients into the bowl.
  6. Slowly mix your dry ingredients into your wet ingredients
  7. Take out a 9”x5” bread pan and line it with parchment paper.
  8. Add your mix into the bread pan.
  9. Bake your bread on 350F/176C for around 55-65 minutes
  10. Use a toothpick to check around the time it’s almost done.
  11. Let it cool for about 5-10 minutes before removing and cutting
