- In a large bowl, whisk together the whole wheat flour, almond flour, whey protein powder, cinnamon, baking powder, baking soda, and salt until everything is well combined.
- In a separate bowl, whisk together the eggs, applesauce, buttermilk (or buttermilk powder and almond milk), Greek yogurt, maple syrup, and vanilla until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients and gently mix until just combined; don’t overmix, a few small lumps are okay.
- Let it rest for 5-10 minutes
- Preheat your oven to 325°F and grease a standard loaf pan (about 8.5 x 4.5 inches), lining it with parchment if you’d like easy removal.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake for 40–50 minutes, or until the top is set and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the pancake bread cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely.
- Slice and serve with maple syrup, fresh fruit, and chopped nuts, if desired.

Store leftovers in an airtight container in the refrigerator for up to 4 days, or slice and freeze for quick grab-and-go mornings. Reheat slices for 20 to 30 seconds in the microwave for the best texture.
