Protein Peanut Butter cups

This recipe delivers 20 grams of protein per peanut butter cup using just six simple ingredients. Natural peanut butter and vanilla whey protein form the base while sugar-free chocolate chips create the topping. You scoop the mixture into silicone muffin liners, drizzle melted chocolate over them, and chill for two hours. They store well in the fridge or freezer, which makes them easy to batch prep for the week.

Ingredients
  

Base
  • 1 cup natural peanut butter melted
  • 3/4 cup vanilla whey protein powder
  • 2 tablespoons calorie-free natural sweetener monk fruit, stevia, erythritol etc.
Chocolate Coating (optional)
  • 1/4 cup sugar-free chocolate chips
  • 1 teaspoon coconut oil melted

Directions
 

  1. Take out a muffin pan and line it with 6 silicone liners.
  2. Take out a large bowl to prepare your base mixture.
  3. Add all of your dry ingredients into the large bowl and mix them together. Add all of your wet ingredients into the same bowl and mix everything together until it's fully combined.
  4. In a small bowl, melt your chocolate chips and coconut oil and mix together. Use a large cookie scoop (3 tablespoons) and scoop your base mixture evenly into the lined muffin cups and press down gently to flatten.
  5. Drizzle your melted chocolate topping over the base mixture in each cup.
  6. Place the muffin pan in the fridge for at least 2 hours to set completely. Serve.
