Protein Waffles

These high protein waffles pack 15 grams of protein per waffle thanks to vanilla whey protein powder and oat flour, with a mashed banana keeping things naturally sweet. The batter comes together in two bowls in about 10 minutes, and each waffle cooks in just a few minutes on the iron. I like making these on Sunday so I can grab them from the fridge during the week and reheat them for a quick breakfast that actually keeps me full.

Ingredients
  

Base:
  • 2/3 cup oat flour
  • 1/3 cup vanilla whey protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 medium ripe banana mashed
  • 2 large eggs
  • 1/3 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
Optional Toppings:
  • Honey or Maple Syrup
  • Fresh Berries
  • Nuts
  • Sliced Fruit

Directions
 

  1. Preheat your waffle iron
  2. Mix all of your dry ingredients into a large bowl.
  3. Mix all of your wet ingredients in another bowl, including the mashed banana. Add the wet ingredients into the bowl with the dry ingredients and mix everything together until just combined.
  4. Lightly spray your waffle iron with oil.
  5. Pour your batter onto the center of the waffle iron and close the lid. Cook according to your waffle maker's instructions, usually 3 to 5 minutes, until steam slows down and the edges are golden.
  6. Carefully remove the waffle and repeat with the remaining batter, re-spraying the iron between batches if needed.
  7. Serve your protein waffles with your favorite toppings like honey or maple syrup, fresh berries, nuts, or sliced fruit.
