Ingredients

Potatoes
  • 2 lbs potatoes cut into 1/2 inch pieces
  • 2 tablespoons avocado oil
  • 6 garlic cloves minced (or 3 teaspoons of minced garlic)
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish
  • Fresh parsley

Directions

  1. Rinse your potatoes and dry them with a paper towel. Peel your potatoes if desired.
  2. On a cutting board, begin cutting your potatoes into about 1/2 inch pieces.
  3. Add your potatoes into a large bowl and fill with water. Allow the potatoes to soak for about 30 minutes to an hour.
  4. Drain your potatoes and dry then well with a paper towel.
  5. Return your potatoes to the large bowl.
  6. Add your oil, seasonings, garlic and parmesan and mix well.
  7. Preheat an oven on 400F.
  8. Take out a baking dish and line it with parchment paper. Give it a light spray of oil and add your potatoes. Be sure to give them enough space so they’re not touching each other. Use multiple baking pans or bake in batches if necessary.
  9. Bake on 400F for 40 to 45 minutes, flipping them halfway through roasting.
  10. Garnish with fresh parsley.
