Ingredients
  

  • 1 lb salmon
  • 2 large eggs
  • 1/2 cup panko breadcrumbs (or whole rolled oats)
  • 3 ½ tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions
 

  1. In a food processor or powerful blender, add all of your ingredients into it.
  2. Blend or process until it becomes like a paste.
  3. Take a small amount of your mixture and form it into a patty. Repeat this process until you have your desired amount of patties.
  4. This is optional, but it’s recommended that you chill the patties in the fridge for 15-20 minutes to help them firm up if they’re too wet. This will help keep them from falling apart.
  5. Preheat a skillet or grill to medium-high heat (350°F/175°C). Lightly oil the surface.
  6. Cook patties for 5–7 minutes per side, or until fully cooked (internal temperature of 165°F/74°C). Avoid pressing down while cooking to retain juices.
  7. Let patties rest for 3–5 minutes before serving.
  8. Serve your salmon patties immediately.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat for best results.
