Ingredients

Pancakes:
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup unsweetened vanilla almond milk
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 3/4 cup whole wheat flour
  • 1/4 cup vanilla whey protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt
S'mores Topping:
  • 2 graham crackers crushed
  • 2 tablespoons chocolate chips
  • 4-6 tablespoons Sugar-free Marshmallow pieces I used 3 ChocZero marshmallow pieces and broke those into four pieces each
  • 1/2 cup vanilla greek yogurt apply on the pancakes, don't mix this with the other three S'mores toppings

Directions

  1. In a large bowl, add all of your wet ingredients and whisk together.
  2. In the same bowl, add all of your dry ingredients, then gently fold everything together until everything is combined. Try not to overmix.
  3. Take out another bowl for the s'mores topping. Take 2 graham crackers and crush them with your hands. Add your chocolate chips along with your marshmallow pieces (break into smaller pieces if necessary) and mix everything together. Set it aside for now.
  4. Turn a burner on medium heat and place a skillet on top. Give it a light spray of oil.
  5. Add about 1/3 cup (6 tablespoons) of batter onto the skillet and place a lid on top. Cook on medium low for about 3 ½ to 4 minutes.
  6. Flip the pancake over, then add a small amount of greek yogurt on top. Then layer your s'mores mixture on top. Place the lid back on and cook for about 1 to 2 minutes. Remove from the heat once finished.
  7. Repeat the process for your remaining pancakes until you're out of your batter.
