Spinach Acai Smoothie

A creamy, high-protein spinach acai smoothie packed with 18g of protein from vanilla Greek yogurt. Blended with unsweetened acai, chia seeds, and a touch of honey for a nutritious breakfast on the go.

Ingredients
  

  • 1 packet (100 grams) Unsweetened Acai
  • 1 cup packed spinach
  • 1 container (5.3 oz) naturally-sweetened vanilla greek yogurt
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tablespoon chia seeds
  • 1 tablespoon honey

Directions
 

  1. Prep the spinach by rinsing it and patting it dry. If you have a high-speed blender, you can add the spinach raw. Otherwise, blend it with the almond milk for about 10 seconds first to avoid leafy chunks.
  2. Add the almond milk, honey, greek yogurt and acai packet to the blender.
  3. Blend on medium-high for 20 to 30 seconds until smooth.
  4. Add the packed spinach and pulse for 5 to 10 seconds.
  5. Sprinkle the chia seeds on top and give a quick 5-second pulse just to disperse them.
  6. Let the smoothie rest for 3 to 5 minutes so the chia seeds can swell. The texture will become a little thicker and more sorbet-like.
  7. If you need more sweetness, drizzle another half-teaspoon of honey. If it is too thick, thin it with a splash of almond milk or water.
  8. Pour into a 16-oz tumbler and enjoy immediately, or refrigerate for up to 24 hours for a chilled snack.

Notes

For best results, blend on high speed until completely smooth. Store leftover blended smoothie in the fridge for up to 24 hours, but shake or stir well before drinking as separation is natural.
