This Vanilla Latte Protein Overnight Oats has 47 grams of protein in a filling breakfast that tastes like a café latte. It’s also really easy to make, even if classic vanilla overnight oats are your baseline, since you simply mix everything the night before, refrigerate, and enjoy a creamy breakfast the next day.

Why I Keep Making This
- Real brewed coffee and espresso powder (optional) create an actual latte flavor instead of the watered-down coffee taste you get from instant mixes.
- Vanilla Greek yogurt. It adds creaminess and sweetness (choose a sugar-free version preferably) while contributing roughly 15 grams of protein on its own. Another one of my favorite recipes involving greek yogurt (not vanilla) is my Mixed Berry Protein Yogurt.
- The overnight soak turns standard rolled oats into something closer to a creamy pudding texture that’s a bit less thick than chia pudding.
- The recipe keeps you full with a solid amount of fiber in it. A big share comes from the flax or chia seeds, so you stay full until lunch without reaching for a snack.

Ingredients
- Vanilla Protein Powder. One scoop delivers close to 25 grams of protein before anything else enters the bowl. Pick a brand that dissolves smoothly so you don’t end up with clumps of powder at the bottom of your jar.
- Old Fashioned Rolled Oats. These are the structure here. Quick oats absorb liquid too fast and turn gummy, so stick with old-fashioned for the right texture.
- Brewed Coffee. Use freshly brewed and cooled coffee for the best flavor. Cold brew works too, but it mutes the coffee taste a bit.
- Unsweetened Vanilla Almond Milk. Adds a light creaminess without adding extra sugar or calories to the mix.
- Vanilla Greek Yogurt. This is what makes the texture rich and contributes about 15 grams of protein per 2/3 cup serving. Full fat or nonfat both work fine. My Chocolate Peanut Butter Overnight Oats is the chocolate version to check out if you’re interested.
- Flax Seeds or Chia Seeds. Keeps the texture interesting while adding roughly 3 grams of fiber per tablespoon. Either seed works, so grab whichever you prefer.
- Vanilla Extract. Ties all the sweet flavors together and rounds out the latte profile. Pure extract makes a noticeable difference over imitation.
- Espresso Powder. Optional but recommended. A teaspoon pushes the coffee flavor from mild to bold which is great if you like strong coffee.
- Whipped Cream. Topping, not a base ingredient. Add it right before eating for the café latte finish.
- Espresso Powder. A light dusting on top mirrors the espresso shot from a real latte. Skip it if you prefer a cleaner presentation.
What Makes This Worth Making
- This protein overnight oats recipe delivers 47 grams of protein in a single serving, which beats most store-bought breakfast sandwiches and protein bars combined. Not to mention, it’s more affordable as well.
- These easy overnight oats involve no cooking, which is great during those hot summer months.
- The coffee flavor is real and not artificial or weak. Real brewed coffee plus espresso powder creates depth that instant coffee just can’t match.
- It stores well in the fridge for up to 3 days, so you can batch-make 3 jars on Sunday and grab one each morning.
- Macros are easy to track and available like with all of my recipes. The ingredient list is short and plain, with no hidden sugars or mystery powders.
- Costs about $4.86 per serving, which is reasonable for a breakfast with this much protein and flavor.

Pairing Ideas
- Scrambled eggs (adds extra protein and makes this a full weekend breakfast spread)
- Fresh berries on the side (balances the sweetness from the vanilla and protein powder). You can also pile them on top of my High Protein Greek Yogurt Bowl for a bigger meal.
- A handful of almonds (adds crunch and healthy fats for a more filling morning meal)
- Smoked salmon on toast (salty and savory contrast to the sweet coffee flavor of the oats)

Swaps and Substitutions
- Dairy-free version. Swap Greek yogurt for a dairy-free vanilla yogurt and use oat milk instead of almond milk. The protein count drops slightly but the flavor stays solid.
- Chia instead of flax. Both work equally well for fiber and texture. Use whichever you have or whichever is cheaper at your store. If you want a more focused chia recipe, check out my Blueberry Chia Seed Protein Pudding.
- Stronger coffee kick. Replace the brewed coffee with 2 teaspoons of espresso powder dissolved in hot water, then let it cool before mixing. The same combo works in drink form in my Iced Vanilla Protein Latte.
- Less sweet. Use plain Greek yogurt instead of vanilla and skip the vanilla extract. Add a dash of cinnamon for warmth without extra sugar.
- Chocolate latte twist. Swap vanilla protein powder for chocolate and add a tablespoon of unsweetened cocoa powder to the base mix.

Things Worth Knowing
-
Coffee Temperature
Let your brewed coffee cool to room temperature or colder before mixing. Hot coffee will warm the yogurt and change the texture of the oats during the overnight soak. Cold brew coffee works great in these coffee overnight oats and is one of my favorite ways to enjoy coffee.
-
Protein Powder Choice
Whey blends dissolve better than isolate in cold liquids. If your protein powder tends to clump, whisk it into the yogurt first before adding the rest of the ingredients.
-
Storage Window
These oats keep well in the fridge for up to 3 days. After that, the oats continue absorbing liquid and the texture gets thicker than most people want for a morning meal.
-
Portion Control
Use a 16 oz mason jar as your measuring guide. The ingredient amounts land right at that volume, so one jar equals one serving with no guessing. If you want an overnight oats that makes a bit more volume, check out my Cottage Cheese Overnight Oats .

FAQs
-
Can I make Vanilla Latte Protein Overnight Oats ahead of time?
Yes. These are designed to be made ahead. Mix everything the night before and grab the jar in the morning. You can also batch-make 3 jars on Sunday for the whole work week.
-
What if I do not have brewed coffee on hand?
You can substitute with 1 tablespoon of instant coffee dissolved in 1/3 cup hot water, then cooled. The flavor won’t be as deep as freshly brewed, but it still works in a pinch.
-
Can I use a different protein powder flavor?
Absolutely. Chocolate protein powder turns these vanilla overnight oats into a mocha overnight oats. Unflavored works too, but you will want to add a bit more vanilla extract to keep the flavor balanced.
-
Is this recipe suitable for meal prep?
It’s ideal for meal prep. Make 3 to 4 jars at once, store them in the fridge, and rotate them throughout the week. Each jar takes about 5 minutes to assemble.
-
How many calories are in these overnight oats?
One serving comes in at around 600 calories, with 47 grams of protein, 60 grams of carbohydrates, and 20 grams of fat. The macros shift slightly depending on the specific brands you use for protein powder and yogurt.
