Chocolate Protein French Toast

This chocolate protein french toast packs 17 grams of protein per slice and comes together in about 20 minutes. I mix eggs, chocolate protein powder, and cocoa powder into a rich batter that soaks into whole grain bread for a breakfast that actually keeps you full. Top it with a quick sugar-free chocolate sauce and you have a high-protein morning meal for under a dollar a serving.

Ingredients
  

French Toast:
  • 2 large eggs
  • 1/3 cup chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 4 slices whole grain bread
Sauce:
  • 2 tablespoons sugar-free chocolate chips
  • 1 teaspoon coconut oil

Directions
 

  1. In a large bowl, add all of your ingredients and whisk everything together.
  2. Turn a burner on medium low heat and place a skillet on top of it. Give it a light spray of non-stick cooking spray.
  3. Dip one slice of bread into the bowl for about 30 seconds, and then flip it over and let the other side soak for about 30 seconds.
  4. Place the bread on the skillet and cook with a lid for about 2 to 2 1/2 minutes. Flip the bread over and finish cooking for about 1 minute.
  5. Remove from the skillet and repeat the process until all of your slices are cooked.
  6. While the French toast cooks, prepare the optional sauce by adding the chocolate chips and coconut oil to a small microwave safe bowl.
  7. Microwave for 15 seconds and mix everything around.
  8. Microwave again for 15 seconds and mix. Everything should be melted by this point but if it's not, repeat the process 1 to 2 more times until completely melted.
  9. Pour the chocolate sauce over your French toast.
  10. Serve.
