I have a weakness for s’mores, and I figured there had to be a way to get that campfire flavor into a high-protein breakfast. This s’mores pancakes recipe makes s’mores protein pancakes that are a combination of nostalgic comfort food and a breakfast that actually supports your fitness goals. The graham cracker, sugar-free chocolate chips, and sugar-free marshmallow topping makes them taste like dessert, but the applesauce and whey protein keep them firmly in the macro-friendly category.

What Makes This Actually Good

  • Unsweetened applesauce replaces oil in the batter, keeping things moist without adding extra fat. It also brings a subtle natural sweetness that pairs well with the vanilla protein powder.
  • Vanilla whey protein powder delivers 60 grams of protein per serving, which keeps you full longer and makes this a legitimate post-breakfast energy source instead of a sugar crash waiting to happen.
  • This graham cracker pancake topping, crushed grahams, sugar-free chocolate chips, and marshmallow included, recreates the full s’mores experience on top of a pancake. This is the s’mores topping that you’ll find for most of my s’mores recipes.
  • Layering Greek yogurt on top of the flipped pancake before the s’mores mixture adds creaminess and protein without mixing it into the batter where it could throw off the texture. if you like Greek yogurt recipes, my High Protein Greek Yogurt Bowl is worth checking out.

Ingredients

  • Vanilla Whey Protein Powder. This is the main protein source in the batter. One quarter cup gives you close to 25 grams of protein, which is what pushes this recipe into macro-friendly territory.
  • Unsweetened Applesauce. Replaces oil or butter in the batter, keeping the pancakes moist while adding a touch of natural sweetness. It also contributes fiber without any fat. I’m a big fan of using unsweetened applesauce and my Apple Cinnamon Protein Donut Holes recipe also uses it as well.
  • Unsweetened Vanilla Almond Milk. Thins out the batter to a workable consistency while adding a hint of vanilla that complements the protein powder.
  • Eggs. Provides structure and contributes about 6 grams of protein each. They also help the pancakes hold together when flipping.
  • Honey. Just one tablespoon is enough to cut through the tang from the protein powder and balance out the cinnamon.
  • Whole Wheat Flour. This is what gives the pancakes their structure. The whole wheat version adds fiber and keeps things more filling than all-purpose flour would.
  • Vanilla Extract. Enhances the vanilla notes from the protein powder and almond milk, tying all the sweet flavors together.
  • Baking Powder. This is what makes the pancakes rise. Don’t skip it or you will end up with dense, flat pancakes.
  • Ground Cinnamon. Adds warmth that pairs well with the graham cracker topping. A little goes a long way here. I reach for cinnamon in a lot of my baking too, like my Protein Cinnamon Rolls.
  • Salt. Just a pinch. It balances out all the sweetness in the recipe without adding any flavor of its own.
  • Graham Crackers. Crushed by hand for a rustic texture that works well as the base of the s’mores topping. They bring that classic campfire flavor.
  • Sugar-free Chocolate Chips. Adds the chocolate component of the s’mores experience. Sugar-free chips helps keep the added sugar low but you can also use regular chocolate chips if that’s all you have.
  • Sugar-Free Marshmallow Pieces. Breaking these into smaller pieces helps distribute the marshmallow flavor throughout the topping. ChocZero pieces work well since they hold their form.
  • Vanilla Greek Yogurt. Spread directly on the pancakes before adding the s’mores mixture. This helps give the pancakes that extra creamy texture without adding excessive calories.

Why You’ll Love This Recipe

  • 60 grams of protein per serving makes this a legitimate high-protein breakfast that keeps you full until lunch instead of reaching for snacks an hour later.
  • The s’mores flavor is genuinely nostalgic. Graham crackers, chocolate, and marshmallow on a pancake is a combo you won’t find in any other protein breakfast I have.
  • Everything mixes in one bowl and cooks on the stovetop, and you don’t need any special equipment or complicated techniques.
  • Greek yogurt layered on top adds creaminess and extra protein without making the pancakes heavy or dense.
  • At $4.65 per serving, these are budget-friendly enough to make on a weekend without feeling guilty about the cost.
  • They work as a weekend treat or an occasional breakfast swap when you want something that feels indulgent but still fits your macros. If pancakes aren’t your thing, my Protein Waffles fill the same high-protein breakfast slot.

Pairing Ideas

  • Black coffee (cuts through the sweetness and is a classic breakfast companion)
  • Fresh fruit like sliced bananas or strawberries (adds brightness and balances the rich topping)
  • Bacon or turkey sausage (filling enough to make it a full weekend breakfast spread)

Swaps and Substitutions

  • Chocolate Protein Version. Swap the vanilla whey protein for chocolate and fold mini chocolate chips directly into the batter instead of using them as a topping for a double chocolate experience. If you want to skip the s’mores topping, my Vanilla Protein Pancakes are the plain base recipe.
  • Gluten-Free Version. Replace the whole wheat flour with a 1-to-1 gluten-free baking flour blend. The texture will be slightly lighter but still holds together well. One gluten-free breakfast recipe that I would recommend checking out is my Protein Banana Coffee Cake.
  • Plant-Based Version. Use plant-based protein powder and almond milk, and swap the Greek yogurt for a dairy-free vanilla yogurt alternative. The s’mores topping stays the same.
  • Extra Marshmallow. Double the sugar-free marshmallow pieces in the topping if you want an even stronger s’mores flavor. They hold up well when broken into small chunks.

Things Worth Knowing

  • Heat Control

Protein pancakes cook differently than regular ones. Keep the heat on medium low and use the lid. High heat will burn the outside before the inside sets.

  • Yogurt Timing

Add the Greek yogurt right after flipping and before you add the s’mores topping.

  • Don’t Overmix

Fold the wet and dry ingredients together until just combined. Overmixing makes the pancakes a bit denser and tougher and since we’re already using whole wheat flour, we want to minimize it as best as possible.

  • Storage

Store leftover pancakes in an airtight container in the fridge for up to 3 days. Reheat in the microwave for 30 seconds or in a skillet over low heat.

FAQs

  • Can I use plant-based protein powder instead of whey?

Yes. Plant-based protein powders like pea or soy work fine, but the batter may be slightly thicker. Add an extra tablespoon of almond milk if needed to get the right consistency.

  • Do the sugar-free marshmallow pieces have to be ChocZero?

You don’t have to. ChocZero (not sponsored) is one of my favorite brands for sugar-free products but any sugar-free marshmallow product works. Just break them into small pieces so the flavor distributes evenly across the topping.

  • Can I make the batter ahead of time?

It’s best to cook these fresh since the baking powder starts working as soon as it hits the wet ingredients. If you must prep ahead, mix the dry ingredients separately and combine with wet right before cooking.

  • How do I know when to flip the pancakes?

Look for bubbles forming on the surface and the edges looking set. If they resist flipping easily, give them another 30 seconds. Protein pancakes need a little more time to set than regular ones.

  • Can I freeze these pancakes?

Yes. Let them cool completely, stack them with parchment paper between each, and freeze in a zip-top bag for up to 2 months. Reheat from frozen in the microwave or toaster.

  • Are these only for breakfast?

Nope. The topping is straight-up campfire dessert, so plenty of readers pull these off the breakfast slot and into the s’mores dessert recipes rotation. Same pancakes, warm the marshmallow a few seconds longer, and it reads as dessert with 60 grams of protein attached.

  • 1 teaspoon ground cinnamon
  • Pinch of salt
S’mores Topping:
  • 2 graham crackers crushed
  • 2 tablespoons chocolate chips
  • 4-6 tablespoons Sugar-free Marshmallow pieces I used 3 ChocZero marshmallow pieces and broke those into four pieces each
  • 1/2 cup vanilla greek yogurt apply on the pancakes, don’t mix this with the other three S’mores toppings

Directions

  1. In a large bowl, add all of your wet ingredients and whisk together.
  2. In the same bowl, add all of your dry ingredients, then gently fold everything together until everything is combined. Try not to overmix.

  5. Add about 1/3 cup (6 tablespoons) of batter onto the skillet and place a lid on top. Cook on medium low for about 3 ½ to 4 minutes.
  6. Flip the pancake over, then add a small amount of greek yogurt on top. Then layer your s’mores mixture on top. Place the lid back on and cook for about 1 to 2 minutes. Remove from the heat once finished.
  7. Repeat the process for your remaining pancakes until you’re out of your batter.
