These air fryer potato wedges have been a staple of mine for many years. Simple, crispy on the outside, fluffy inside, and coated in garlic parmesan seasoning that hits every time. They take almost zero effort to throw together and the air fryer handles all the work.

The Method Behind It

  • Soaking the cut potatoes in cold water pulls off excess starch, which means crisper wedges straight out of the air fryer instead of gummy ones.
  • Drying them thoroughly before adding oil and seasoning is the difference between roasted and steamed. Moisture is the enemy of crisp.
  • Cooking in a single layer with space between each wedge lets hot air circulate properly. Batching them out is worth the extra ten minutes.
  • The garlic parmesan seasoning blend hits on everything that already works with russet potatoes. Smoked paprika adds depth without heat, and Italian seasoning ties it all together.

Ingredients

  • Russet Potatoes. The starchy backbone of the recipe. Their fluffy interior and thick skin make them ideal for wedges that crisp up nicely.
  • Olive Oil. Coats the wedges so the seasoning sticks and the surfaces actually brown instead of drying out.
  • Grated Parmesan Cheese. Melts into the surface during cooking and creates a salty, savory crust that clings to every bite.
  • Garlic Powder. This is what gives the wedges their main savory flavor.
  • Smoked Paprika. Adds a subtle smoky warmth without any heat. Gives the wedges that golden color instead of just looking pale and boiled.
  • Italian Seasoning. Herbs like oregano, basil, and thyme woven into one sprinkle. Makes the kitchen smell like something fancy.
  • Onion Powder. Complements the garlic without being the star. Adds another layer so the seasoning doesn’t taste one-dimensional.
  • Salt. Brings everything into focus. You’ll taste the difference once it’s in there.
  • Black Pepper. A quiet background note that keeps things from tasting flat.
  • Fresh Parsley. The garnish. Adds a pop of color and a fresh counterpoint to all the rich, savory seasoning.

The Case for Making This

  • The air fryer handles the cooking so you aren’t standing over a hot oven with your kitchen turning into a sauna. Less mess, less cleanup.
  • Russet potatoes are cheap and you can find them at literally any grocery store. No specialty ingredients, no special trip to a specialty shop.
  • The seasoning blend uses spices you probably already have in your cabinet. Garlic powder, paprika, Italian herbs, parmesan. That’s it.
  • They work as a side dish for pretty much anything. Pair them with chicken, fish, burgers, or eat them straight out of the basket like I do. The Southwest Chicken Salad Meal Prep is another meal where these wedges make a solid replacement for croutons.
  • Crispy texture without deep frying. The air fryer circulates hot air around each wedge and you get that fried potato crunch with a fraction of the oil.
  • Leftovers reheat well in the air fryer too. Five minutes at 400F and they’re back to something close to their former glory. The same reheating trick works for the One Pan Salmon and Veggies if you have leftover fish from dinner.

Building a Meal Around This

  • Air fryer chicken breast (a lean protein that pairs naturally with the garlic parmesan flavor. The Air Fryer Honey Garlic Chicken Tenders use a similar garlic flavor profile with these wedges on the side.)
  • Baked salmon, the richness of the fish complements the crispy potato wedges nicely
  • Simple green salad with vinaigrette. Keeps the meal from feeling too heavy on one note
  • Honey garlic sauce or your favorite dipping sauce for extra flavor on top. The Air Fryer Korean Chicken Thighs have a similar dipping-friendly style that pairs great with these.
  • Grilled burgers, these wedges are basically upgraded french fries and they travel well alongside one

Flexible Options

  • Spicy version — swap the smoked paprika for cayenne or add red pepper flakes to the seasoning blend for heat
  • Ranch style — toss with dried ranch seasoning mix instead of the Italian herb blend for a completely different flavor profile
  • Dairy-free — skip the parmesan cheese and add a pinch of nutritional yeast for that savory umami note without any dairy
  • Cajun seasoned — coat with Cajun seasoning instead of the Italian herb blend for a bold, Southern-style twist
  • Sweet potato — use the same method with sweet potato wedges and bump the cook time by a few minutes. The Air Fryer Sweet Potato Fries use this exact same technique if you want to see how it translates.

Things Worth Knowing

  • Soaking Time
Don’t skip the hour-long soak in cold water. It pulls off surface starch and directly impacts how crispy your wedges get. Thirty minutes works in a pinch, but full hour is better.
  • Dry Them Well
After draining, pat the wedges completely dry with paper towels. Any leftover water turns to steam in the air fryer and steamed potatoes aren’t crispy potatoes.
  • Batch Cooking Matters
Overcrowding the basket is the fastest way to get soft wedges. Cook in a single layer with space between each one. Two or three batches beats one sad batch every time.
  • Preheat the Air Fryer
Give it a full 5 minutes at 400F before loading the wedges. A hot start means immediate crisping instead of a slow warm-up that dries them out first.
  • Seasoning Timing
Toss the wedges in oil and spices before cooking, not after. The heat caramelizes the seasoning onto the surface. Sprinkling on raw spices at the end tastes like dust.

FAQs

  • How do I get potato wedges crispy in the air fryer?
Dry them thoroughly after soaking, toss in oil evenly, preheat the air fryer, and cook in a single layer without overcrowding. Those four steps together are what make the difference between soft and crispy.
  • Can I make these in the oven instead?
Yes. Toss everything the same way and spread on a baking sheet at 425F for about 25 to 30 minutes, flipping halfway. The air fryer just speeds things up and gets them crispier with less oil.
  • How do I store leftover potato wedges?
Keep them in an airtight container in the fridge for up to three days. Reheat in the air fryer at 400F for about five minutes to bring back some of the crisp. The microwave will make them soft and chewy.
  • What cut of potato is best for wedges?
Russet potatoes are the standard choice because of their high starch content and fluffy interior. Yukon Gold works too if you want something a bit creamier, though they won’t get quite as crispy.
  • Can I prep the wedges ahead of time?
Cut and soak them up to a day in advance, then store covered in the fridge. Just make sure to drain and dry them thoroughly before seasoning and cooking.

  2. Slice your potatoes into wedges, about 1/2 inch thick.
  3. Give the wedges a quick rinse in a colander to wash off any excess dirt.
  4. Place your cut fries into a large bowl of cold water and completely submerge them under the water.
  5. Let them soak in the water for one hour,
  6. After an hour, drain the fries and pat them dry with a paper towel.

Notes

For extra-crispy wedges, soak the potatoes a full hour to remove excess starch. Air fryers vary, so keep an eye on the first batch for timing adjustments.
